Jumbo prawn gratin with avocado
    For 2 people - Preparation time 15 minutes - Cooking time 5 minutes

The market:
    6 jumbo prawns
    50 g of parmesan
    2 avocados
    ½ lemon
    Olive oil
    Salt
    Pepper
Preheat the oven to 210C (gas mark 7). Peel the avocados, remove the stones and reduce the flesh to a puree in the blender. Add half of the parmesan and the lemon juice. Mix the lot, adding a dash of olive oil little by little as for mayonnaise, add salt and pepper. Place in fridge. Shell the jumbo prawns while raw and remove the innards from the tail. Pan fry them for 1 minute on each side in a little oil, add salt and pepper. Divide the avocado mousse into the mini casseroles dishes and place a jumbo prawn in each one, add a dash of olive oil and sprinkle with rest of parmesan. Place in the oven for 5 minutes and serve lukewarm.
