Pineapple Gratin - mini casserole
For 2 people - Preparation time 20 minutes - Cooking time 3 minutes

The market:
½ pineapple
1 small piece of candied ginger
Juice of half a lime
5 cl of milk
3 cl of single cream 15 g of sugar
2 egg yolks
Icing sugar

Remove the skin from the pineapple and cut into slices, taking care to remove the center of the fruit. Set aside. Pour the milk and cream into a saucepan and heat on a low heat. In a bowl, beat the sugar and the egg yolks together until the mixture turnes white. Pour the mixture into the milk as soon as the milk has boiled. Stir and cook for 5 minutes until it thickens. Remove from the heat and gradually and the lemon juice while beating. Preheat the oven in grill mode. Divide the slices of pineapple into mini casserole dishes and top with the briken-up ginger. Pour in the cream and place under the oven grill for 3 to 4 minutes. Remove from oven, sprinkle with icing sugar, and serve.
