Raspberry gratin
    For 2 people - Preparation time: 15 minutes - Cooking time: 3 minutesServes

The market:
    200 g of raspberries 20 cl of milk
    20 g of sugar
    2 eggs yokes
    ½ vanilla pod
    2 table spoons flaked almonds
In a saucepan, heat the milk along with the vanilla pod spilt in two lengthwise. Leave to infuse away from the heat. In a salad bowl, vigorously mix the sugar and the egg yolks, until the mixture turns white. Add the vanilla-flavored milk to this mixture, after removing the vanilla. Stir. Place the lot back on a low flame, stirring continuously until the cream begins to thicken. Preheat the oven in a grill mode. Gently clean the raspberries with damp cloth. Divide the into the mini casserole dishes, squeezing and sprinkle the lot with flaked almonds. Place the mini casserole dishes in the oven for 3 to 4 minutes. Keep an eye on the almonds, they should be golden but not burnt.
As a simple accompaniment, try a very good quality vanilla ice cream, or for more original touch , a pear sorbet.
