Chicken and dried apricot tajine
Serves 4 - Preparation time: 25 mins. Cooking time: 1 hour

The market:
1 chicken, cut into pieces
3 onions
1 untreated lemon
200 g dried apricots
1 teaspoon of ginger powder
1 teaspoon of cinnamon powder
5 sprigs of fresh coriander
25 cl chicken stock
Salt, pepper, olive oil

Preparation
Preheat the oven to 350.
Cut the onions into thin slices. In a casserole dish, soften the onions and brown the chicken on all sides in a little olive oil.
Remove from the heat, season the pieces of chicken with the cinnamon and the ginger. Stir well.
Place all these ingredients in the bottom of your tajine. Add the dried apricots, the lemon cut into quarters and the coriander leaves and cover with hot chicken stock.
Cover and cook for 1 hour. Serve hot with couscous or bulgur wheat.
