Veal and orange tajine
Serves 4 – Preparation time: 25 mins. – Cooking time: 1 hour 30

The market:
6 good-sized veal cutlets
3 untreated oranges
20 cl vegetable stock
3 cloves of garlic
1 bouquet garni
1 teaspoon of cumin powder
1/2 teaspoon of cinnamon powder
Salt, pepper, olive oil

In a casserole dish, brown the veal cutlets in a little olive oil. Add salt and pepper.
Press the juice of one orange.
Cut the two other oranges into thin slices.
Place the veal cutlets in the bottom of the tajine. Pour orange juice over them.
Season them with the salt, pepper, cinnamon and cumin.
Cover with vegetable stock.
Add the sliced oranges and the bouquet garni.
Cover and cook in the oven for 1 hr 30.
Serve with couscous.
